Yellow Curry With Eggplant, Okra and Cicken Yellow curry with eggplant, okra, and chicken 🍛

▪️Dancing chef yellow curry paste
▪️400 ml of coconut milk
▪️1 cup of water
▪️Chicken thighs, cut into pieces
▪️1 white onion, sliced
▪️1/2 eggplant, cubed
▪️2 cups okra, chopped
▪️2 fresh lemongrass stalks (about 2 inches)
▪️1 jalapeño pepper, chopped
▪️For more spice, add 3 garlic cloves, and a dash of turmeric, curry power, chili powder, cumin, and fish oil for taste

▪️Add yellow curry paste, water and coconut milk in a pot. Mix, bring to a boil. Add chicken and drop the heat down to simmer for an hour or two.
Add eggplant, okra, onions and extra spice (if you want). Cook until eggplant just starts to get soft.
▪️Serve with rice or paratha
