Szechuan Chicken Lettuce Wraps

Szechuan Chicken Lettuce Wraps Szechuan chicken lettuce wraps (cactus club style!) 🐔🥬🌯

• 3 chicken breasts
• 2 ½ cups Panko bread crumbs
• soy sauce
• sesame oil
• 2 eggs
• flour

• ground black pepper

• iceberg lettuce
• cilantro
• green onions
• cashew nuts or peanuts
• ½ cup sweet chili sauce
• toasted sesame
• 1 cup chow men noodles (Farkay brand)
• lime

• Chili oil
• Chipotle mayo
• Soya sauce
• Sriracha

• Preheat oven to 400 F. Oil or line a large baking tray
• Cut chicken breasts into small bite-sized pieces
• In a skillet, heat sesame oil over medium heat. Add panko breadcrumbs and cook them for 2-3 min while stirring continuously until the crumbs start to brown.
• Arrange the flour, breadcrumbs and whisked eggs into three separate bowls
• Place the chicken breast pieces into the flour bowl. Shake to coat evenly
• Place the coated pieces into egg wash. Coat evenly
• Place these pieces now in the breadcrumbs bowl. Shake to coat evenly
• Place the coated chicken pieces onto a raised baking tray. Bake for 20 - 25min 

• Place the baked chicken pieces, chopped cilantro, chipped green onions, crushed peanuts/ cashews and chow mein noodles into a big bowl. Add sweet chili sauce, chili oil, soy sauce, toasted sesame seeds. Toss to coat.
• Cut the iceberg lettuce in half

For sauces, scoop some chili oil into a little bowl and mix the chipotle mayo + soy sauce + sriracha into another bowl. Scoop your desired amount of chicken mixture into the lettuce leaves and wrap it like a little burrito. This was so yummy and really filling. Enjoy!
