STUFFED ZUCCHINI BOATS

STUFFED ZUCCHINI BOATS

INGREDIENTS:
*1 pound traditional sausage
*1/2 cup onion, diced
*2 cloves garlic, minced OR 1/4 teaspoon dried/granulated
*1/4 teaspoon salt
*1, 15 oz. can diced tomatoes (my favorite is ‘hunts’ fire-roasted tomatoes)
*1 cup mozzarella cheese, grated, plus more for top
*1 teaspoon dried basil
*3 large, or 4 medium sized zucchini’s, halved lengthwise
*olive oil
*salt and pepper
*panko breadcrumbs, about 1/4 cup
*fresh basil for garnish

DIRECTIONS:
1. Preheat oven to 350 degrees.
2. Scoop the seeds (but not the flesh) out of each zucchini, then drizzle with a little oil, sprinkle with a little salt and pepper, then put on a baking sheet cut-side up and bake for 10-15 minutes. 
2. In a large frying pan, cook the sausage and onion, stirring frequently, until the sausage is crumbly and fully cooked, and the onion is translucent.
3. Add the garlic, tomatoes, basil, and 1/4 teaspoon salt to the sausage. Mix well. Let the flavors come together over medium to medium high heat for a few minutes. 
4. Turn off the stove and add 1 cup of grated mozzarella cheese to the sausage filling. Toss together so it’s mixed well. 
5. Take the zucchini out of the oven, and fill each zucchini with the sausage-cheese mixture. Top each zucchini boat with an extra sprinkling of cheese, and 1 teaspoon of panko breadcrumbs.
6. Return to oven and bake uncovered for an additional 10-15 minutes or until zucchini is tender and cheese is melted.
7. Serve immediately and enjoy!
