Simply Delicious Courgette fritters & Boiled potatoes -Simply delicious๐Ÿ˜‹
* Courgette fritters
* Boiled potatoes
* Yellow and red tomatoes with fresh coriander

For the courgette fritters:
* Courgettes
* Sea salt
* Seasoning like garlic & onion powder, dried herbs
* Nutritional yeast
* Baking powder
* Plain flour
* Oil for frying

Grate 4-5 courgettes (you need at least 3-4 to make 4-5 fritters), add salt and leave for 15-30 min.

Squeeze out excess water, add seasoning you like (I used garlic powder, onion powder, nutritional yeast and dried herbs). Then add in 1-2 tsp baking powder and 3-4 tbsp plain flour. How much flour and baking powder you need depends on the amount of courgettes you have. To make around 10 fritters I used 6 medium size courgettes and then used 2 tsp baking powder and more flour. You only need enough flour for the batter to stick together so better start with less, you can always add extra. And yes, the batter will be sticky but it’s okay, it’s still workable.

Then fry in oil (add more oil than usual) on low-medium heat until brown and then flip over. I’d say probably 3-4 min on each side at least.

Eat them with anything or on their own, I wasn’t very creative so just boiled some potatoes๐Ÿ˜…
