SESAME SRIRACHA TUNA STUFFED AVOCADO BOAT SALAD

Homeshabby.com - SESAME SRIRACHA TUNA STUFFED AVOCADO BOAT SALAD and ALMOND BUTTER DRESSING! Happy Thursday loves! Made this for lunch the other day and it was KILLER! #Ad I recently discovered @portofinotuna and I have been loving it. They offer albacore and yellowfin, and it’s packed in olive oil which adds so much flavor! I’ve been using it in pasta, salads, on toast...so good! You can purchase on Amazon or Boxed online, and if you’re in the Boston area you can get it at Market Basket or Shaw’s. I hope you’re all having an amazing week!!! I’m off to get some work done and possibly go for a walk...in the meantime, check out the recipe below. I’ll be posting it to my web site as well.

Deets:

For the salad I layered baby spinach, shredded carrots, mango slices and red cabbage. I scooped out the avocado a bit and filled it with this AMAZING spicy tuna made with yellowfin @portofinotuna mixed with chopped cilantro, green onion, chopped red peppers, and a mixture of 2 tablespoons of almond milk yogurt mixed with 1 tablespoon sriracha hot sauce, a teaspoon coconut aminos, 1 teaspoon lime juice and 1/2 teaspoon of sesame oil. Almond butter sauce/dressing: 1/3 almond butter (I used Georgia Grinders), 2 tablespoons coconut aminos, 2 tablespoons Tamari soy sauce, 2 tablespoons of freshly squeezed orange juice (or honey), 1 tablespoon of lime juice, 1/2 teaspoon curry powder, 1 garlic clove minced, 1 tablespoon sriracha.
