Sesame-Ginger Salmon over Soba Noodles

Homeshabby.com -Another BIG favorite in my house. We love noodles and salmon is such a good fish to marinate because it soaks in all the spices and sauces!.
* 4 6oz Salmon Fillets * 6 Tbsp sesame oil * 4 Tbsp rice vinegar * 2 Tbsp honey
* 4 Tbsp soy sauce
* 1 Tbsp mirin (If you can't find mirin, substitute for worcester sauce)
* 1 packet of Soba Noodles
* 1/4 cup of toasted sesame seeds
* 3 chopped scallions .
Directions: * Take Salmon and 2-3 Tbsp of above sauce and put togeth in a ziplock back. Use more if necessary depending on size of salmon. Marinate 20 minutes. *NOTE* If you marinate for 30 minutes or more the vinegar will toughen the salmon.

* Make soba noodles according to package directions. Add remaining sauce to noodles after they are done and drained. Only save some sauce if you want to drizzle over the fish at serving time.

* Remove salmon from ziplock bag and place on foil-lined broiling sheet. Broil 8-12 minutes depending on fillets. * Serve salmon on top of soba noodles. Garnish with toasted sesame seeds and scallions
