PALEO “CHEESY” PIZZA QUESADILLAS with AVOCADO RANCH - TEN MINUTES to make these PALEO “CHEESY” PIZZA QUESADILLAS with AVOCADO RANCH! Made these turkey pepperoni “pizzas” for lunch the other day and they were so good! They could easily be made vegan if you omit the turkey. I made a quick tomato spread (see below) that works well for pizzas and quesadillas. Happy Monday loves! Hope you all had a fabulous weekend. I took a little hiatus from the gram this weekend to enjoy some quality time with my man and my family...I got to spend Saturday with my nephew, then a housewarming at my brother’s new house, and yesterday was super boyfriend and I went and saw the new Lion King! What did you do this weekend? 


2 @sietefoods almond tortillas heated up on medium high in a pan sprayed with avocado oil, spread the tomato spread, then dairy free cheese (I used @daiyafoods dairy free Swiss but any works, then add @applegate turkey pepperoni and fresh basil. Once the cheese starts melting fold over. Cook for another 30 seconds or so. Tomato spread: mix 2 tablespoons of tomato paste with 2 tablespoons ketchup (I used @primalkitchenfoods no added sugar), 1-2 teaspoons olive oil and some salt/pepper/Oregano. Avocado Yogurt ranch: 1/2 cup dairy free yogurt (or any plain unsweetened yogurt), 1 ripe avocado, 1.5 tsp dill seed, 2 tbls chopped fresh parsley, 1/2 tsp salt, 1/2 teaspoon pepper, 1/2 tsp garlic powder, 1/2 tsp onion powder. Blend together until smooth.
