MOCHA COLD BREW ICE CREAM - HUMP DAY MOCHA COLD BREW ICE CREAM (NO CHURN/VEGAN/PALEO/BANANA FREE). I’ve been talking about this in my stories and super excited to share the recipe. This deliciousness is made with coconut milk, avocado, dates, and @wanderingbearco Mocha Cold Brew! I couldn’t let #nationalicecreammonth pass by without one recipe. It is super simple to make, the hardest part is waiting for it to freeze 🙃 I have seriously been enjoying this cold brew from @wanderingbearco all summer long and it is the best I have ever had! The mocha blend has just a splash of coconut milk in it and no sweeteners. What is your favorite ice cream flavor?


1 cup of full fat coconut milk (drained) **I also made this with undrained and froze it first**, 1/2 cup @wanderingbearco mocha cold brew, 1 cup avocado chunks, 2 tablespoons cocoa powder, 1/2 teaspoon espresso powder, 1/3 cup + one tablespoon of date paste OR maple syrup. (I make large batch of date paste by blending 20 pitted dates with about 1/2 cup or more of hot water). Blend ingredients until smooth and place in a freezer safe dish. You can stir in some chocolate chips if you want. Freeze for at least 6 hours...then serve! Top with your choice of toppings.
