Summer meal at its finest 🙃 Made these babies for dinner the other night, and they were unreal! I used @CarringtonFarms Organic Coconut Cooking Oil in the marinade, which is super simple for cooking because it is in liquid form. The flavor is so clean, it’s organic, and it has a higher heat point than traditional olive oils so it’s perfect for grilling these delicious shrimp. 1 pound of jumbo wild shrimp marinated in this marinade: 1 tablespoon @CarringtonFarms Organic Coconut Cooking Oil, 1 tablespoon coconut aminos, 1 tablespoon lime juice, 1 teaspoon lime zest, 2 tablespoons cilantro, 1/2 teaspoon garlic powder, 1/2 teaspoon chipotle powder. Avocado sliced in half and scooped out then loaded up with chopped tomatoes, mangoes and cilantro.
