VEGETABLE PEARL BARLEY SOUP

Yesterday Isaac and I enjoyed these comforting bowls of vegetable pearl barley soup, I even decorated mine with some stars as well as Isaac’s - well why not hey!

Ingredients-
🔸 1 tablespoon olive oil
🔸 3 cloves of garlic
🔸 100g pearl barley
🔸 1 leek, finely chopped
🔸 4 carrots, peeled and chopped
🔸 2 parsnips, chopped small
🔸 1 potato, chopped into 1 inch cubes
🔸 3 sticks of celery
🔸 1 can chopped tomatoes
🔸600ml vegetable stock
🔸 2 tablespoons tomato purée
🔸 2 teaspoons ground coriander
🔸 1 teaspoon mild curry powder

Method-
🔸 Cook the pearl barley in a pan of water for around 15 minutes
🔸 Heat the olive oil in a large pan and fry the leek for a few minutes
🔸 Add the ground coriander and mild curry powder to the leek and cook for a few minutes more, mixing the spices into the leek
🔸 Add the carrots, celery, parsnip and potato and cook for a further 10-15 minutes, stirring throughout
🔸 Add the chopped tomatoes, pearl barley, tomato purée and stock and cook on a low heat for around 30 minutes, until vegetables are cooked
🔸 Add extra water if the soup needs this to thin it out a little more- if it’s still looking too thin for your liking then leave it for about 10 minutes after cooking, the vegetables and pearl barley will soak the water up.
