We are staying at my mum and step dads this weekend, hence the difference in photo background and I came up with this really easy, extremely tasty stew for Isaac’s dinner (us adults are having a Chinese )
.
Ingredients-
1 tablespoon rapeseed (or olive) oil
1 red onion, chopped
1 garlic clove, chopped small
2 medium sweet potatoes, chopped into 1 inch size cubes
1 courgette, chopped and quartered
1 teaspoon ground coriander
2 tablespoons tomato purée
1 tin plum or chopped tomatoes (plum tomatoes give more flavour but ensure you chop them beforehand or mash in the pan with the back of a fork)
1/2 cup red lentils
1 and 1/4 cups water or stock

Method-
Fry onion in rapeseed/olive oil for a few minutes
Add garlic and ground coriander and stir through
Add sweet potato, courgette, lentils, plum/chopped tomatoes, tomato purée and water/stock and stir through (don’t worry if the stew seems watery at this point as the lentils will soak the water up)
Leave to simmer for around 25 minutes, stirring throughout, until potato and lentils are cooked

This meal was so simple, using staple ingredients that are packed full of nutrition.

Tip- When serving a meal with a high iron content, accompany it with vitamin C for maximum iron absorption.

Strawberries
Broccoli
Oranges
Spinach
Sweet (or white) potato
