If you are looking for a fun and TASTY snack or side for you or for the kids, I got you! With September approaching, so is back-to-school and these babies take about 10 minutes to prep! Perfect for an after-school snack or an easy dinner side with some protein. Crispy on the outside and chewy on the inside. I made these crispy ‘fries’ using a mixture of @CarringtonFarms Organic Flax Chia Blend Paks and almonds. I love the flax and chia blend - It’s loaded with fiber and packed with Omega 3’s. It’s great to add to smoothies, baked goods or these fries! They come in to-go packets as well—making them great for travel. This recipe is a great way to get you or your kids to get a healthy serving as well as enjoy some veggies. My boyfriend isn’t the biggest zucchini fan, but he DEVOURED these 🙃 Recipe deets below! 




Deets: 

2 medium zucchini cut into “fries,” 2 eggs beaten (in a separate bowl), 1/2 cup almonds, 2 tablespoons nutritional yeast, 1 tablespoon @CarringtonFarms Organic Flax Chia Blend Paks, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder. Place almonds in a food processor or high speed blender and grind down to create an almond meal. In a small bowl mix together the almonds, nutritional yeast, Organic Flax Chia Blend, salt, garlic and onion powder. If using an air fryer, preheat to 390 or if using an oven preheat to 425. Dip the zucchini in egg, then coat in the mixture. Brush or spray with @CarringtonFarms Organic Coconut Cooking Oil. Air fry for 6-7 minutes (4-5 fries at a time) or bake for 20 minutes on nonstick baking sheet. Chipotle ketchup: mix together 1/3 cup ketchup with 1-2 tablespoons of chipotle hot sauce.
