CHEWY OATMEAL CHOCOLATE CHUNK COOKIES

Homeshabby.comHow many times have you heard someone say they have the “best cookie recipe ever”? I think preferences for cookies vary as much as preferences for cute shoes or paint colors. There are sooo many possibilities and everyone will have a different opinion. I think we can all safely agree that most all cookies are good, but some are best. These cookies are *my* best. They are chewy, not cakey (very important) thanks to the 2:1 ratio of brown to white sugar and the oats. They are soft, and are filled with (my favorite!) *semi-sweet* chocolate chunks!

CHEWY OATMEAL CHOCOLATE CHUNK COOKIES

INGREDIENTS:
*1 cup butter, softened to room temp, but not melted *1 cup brown sugar
*1/2 cup white sugar
*2 eggs
*2 teaspoon vanilla
*1 1/2 cups flour
*1/2 teaspoon baking soda
*1 teaspoon salt
*3 cups quick oats
*1 1/2 cups semi-sweet chocolate chunks
*optional, 1 cup of chopped nuts (walnuts, pecans, or macadamia nuts are all 😍😍😍)

DIRECTIONS:
1. Preheat oven to 325 and combine butter and sugars. Beat well until fluffy.
2. Add eggs, one at a time and mix just until combined.
3. Add vanilla, salt, and oats and mix lightly.
4. Sift (or whisk) the flour, and baking soda together so there are no lumps. Add the dry ingredients to the dough and mix gently but don’t overmix.
5. Add the chocolate chips (and nuts if using) and fold them in.
6. Scoop dough out using 1/4 cup measuring cups, and roll into balls. Lay six dough balls on a cookie sheet lined with parchment paper. 
7. Bake for 10 minutes or just until edges are set. Do not over bake! Remove from oven and transfer to cooking rack. Repeat with the rest of the dough. (This recipe makes 18 cookies)
8. Very important and extremely controversial: for optimal chewiness, let cookies cool completely! If you’re less into chewiness and more into doughiness, then disregard my advice. But as the self-proclaimed president of the chewy-cookie-fan club, let them cool and the texture will only get better! Enjoy!
