BBQ SHRIMP and CREAMY BALSAMIC MUSTARD ZOODLE SALAD

Homeshabby.com - BBQ SHRIMP and CREAMY BALSAMIC MUSTARD ZOODLE SALAD! Happy Tuesday all. I hope you’re having a great week. Made this meal for my boyfriend and I to split for lunch the other day and it was DELICIOUS. Super easy to make too. I seared the shrimp in @bertolli_us olive oil, because it’s my favorite....high quality and flavorful. Did you know that the type of soil used for your olives will impact the flavour and quality of your oil? Bertolli ensures that their soil has the perfect amount of water to protect the soil’s moisture under the sun! So the farmers are able to get the best quality! Happy Tuesday loves! Off to get some work done.

Deets:
Wild shrimp generously seasoned with Trader Joe’s Coffee BBQ rub, then seared in @bertolli_us olive oil (2 minutes per side on medium high). Zoodles (made the day before and then left covered in the fridge so they dry out a little and don’t get soggy), tomatoes, basil and balsamic yogurt dressing. (2 tablespoons balsamic reduction mixed with 1 teaspoon Dijon mustard and 1/2 cup almond milk yogurt).
